These are a few of my favorite teas..
Living in Hong Kong means Jen and I are drinking a lot of tea. The two that I always have in my office are Flower tea (ju hua cha) and White Tea (Silver Needle is my favorite). Both of these teas can be brewed multiple times, and if I start a pot in the morning, I can drink it all day long. Flower tea is simply Chrysanthemum. It is sweet and fresh tasting and seems to mellow me out. White tea is also sweet, but is very mellow and doesn’t have the grass or sea taste of a normal green tea. White tea also doesn’t have as strong tannins like in darker fermented teas. So you can drink it all day without the cotton mouth. I have found White tea to be the hardest to find (or at least ask for in the tea shops). It is also the most expensive, and I have had to be very picky when buying it because they like to try to slip me a lower grade than I am asking for. Rule of the day, don't buy from a tea shop that won't brew you their tea to try, adn don't buy tea you haven't tried.

Simon seriously digs Pu-erh tea . He considers it very good for your health and that it aids digestion. Pu-erh is a very dark rich tea, and there are many kinds of Pu-erh. It is aged, and can be aged in several different ways (in caves, in earthen pots, in fruit rinds etc). It is one of those teas that get very strong as they sit in the hot water. (you can have white tea sit in hot water for an hour and it will not become undrinkable. Some Pu-erh can become strong to the point of being undrinkable in 5 minutes).

Pu-erh is perfect with Dim-Sum. It cuts right through the fat, and it’s rich flavor compliments the exotic variety of the dim-sum lunch. It is a great tea; I just can’t drink it all day. There are some Pu-erh teas that have been aged for dozens of years. These are for celebrations and medicinal purposes.  ¶ 3:44 AM
